Turkey Breast with a Maple Cornbread Stuffing

I found this recipe and just had to post it...I love the sweet taste of maple and this is the recipe I will be making for Thanksgiving...Now Hubs doesn't really like the taste of maple so I will need to make turkey a different way for him, but that's okay...as long as I get my Maple Turkey...yummy!

Turkey Breast with a Maple Cornbread Stuffing

  • 2 tablespoons butter
  • 1 onion, chopped
  • 1/2 pan cornbread, crumbled
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2-3 pound boneless, thawed turkey breast
  • 1/3 cup maple syrup
  • 1/2 cup apricot preserves
  • 1/2 teaspoon dried thyme leaves

Directions:

Melt butter in saucepan, add onion and cook til tender. In large mixing bowl place crumbled cornbread and pour onions/butter over cornbread. Season with salt and pepper and mix well.

Mix maple syrup, apricot preserves and thyme leaves in bowl. Mix half this mixture with the cornbread mixture, reserving rest of maple mixture. Spray crock pot with cooking spray and place cornbread mixture in crock pot. Sprinkle turkey breast with salt & pepper. Place turkey breast on cornbread mixture. Pour reserved maple mixture over turkey. Cover and cook on LOW for 6-7 hours. Making sure meat thermometer reads 165' when put in thickest part of breast.
