I had this recipe years ago and forgot about it until I was gathering up some chili, soup and stew recipes to get us through these cooler days and came across it again.
Taco Soup in the Crockpot
Ingredients:
1 pound ground beef
1 onion, chopped
1 (16 ounce) can chili beans, with liquid
1 (15 ounce) can kidney beans with liquid
1 (15 ounce) can whole kernel corn, with liquid
1 (8 ounce) can tomato sauce
2 cups water
2 (14.5 ounce) cans peeled and diced tomatoes
1 (4 ounce) can diced green chili peppers
1 (1.25 ounce) package taco seasoning mix
Directions:
Brown the ground beef, drain then put in crock pot. Pour all other ingredients into the crockpot and stir to mix. Cook on LOW for 6 - 8 hours or HIGH for 3 - 4 hours. Serve with corn chips.

This would be an excellent cold weather meal! Add corn chips and cheddar cheese and...yum.

This sounds really good too. Sadly, no one in my family likes beans, so I'd have to eat it all myself.
Hey, Rena - I'm making this right now, and I left all the beans out of the recipe. It still looks amazing! I also used chicken broth (I would have used beef if I had it) instead of water to give it some extra flavour.
Yummy!
I have this recipe, but mine also adds one package of Hidden Valley Ranch dressing. Very good!
