With the holidays coming up, I thought this might be a good recipe. Now, I have to admit...I don't like pumpkin pie, so I have not had this recipe nor have I ever made this recipe. I came across it and I thought some of you might enjoy it, so here goes:
Pumpkin Pie Pudding
- 1 (15 ounce) can pumpkin (solid/packed)
- 12 ounce can evaporated milk
- 3/4 cup sugar
- 1/2 cup buttermilk baking mix
- 2 eggs, beaten
- 2 Tablespoon melted butter
- 1 Tablespoon pumpkin pie spice
- 2 teaspoon vanilla
- Whipped cream or ice cream
Spray crock pot with cooking spray. Mix all ingredients together except whipped cream/ice cream. Mix well and pour into crock pot. Cover and cook on LOW 6-7 hours. Spoon into individual bowls with a scoop of ice cream or whipped cream.

I absolutely LOVE pumpkin pie and I think I make the best pumpkin pie IN THE WORLD (you might actually like it if you took a taste....)That said, this pudding recipe seems pretty good, though I'd use several other spices.
Bish...I don't know why I don't like pumpkin pie...everyone in my family does, but I just can't bring myself to eat it...sigh...Hugs...
I have to try this one. I'd also like to find a pumpkin soup recipe for the crock-pot. Have you seen any, Brenda? Costco sells a good pumpkin bisque this time of year, but I'd love to simmer one in the CP myself. Off to print this one up -- can't say no to pudding!

My plan is to start posting recipes for the holidays next week...So your whole Thanksgiving Turkey dinner can be made in the crockpot and everyone can rest and enjoy their company...I will look for a pumpkin soup/bisque for you...Hugs...
